Just like a toque-wearing Moses, Andre Rochat parted the waves of Las Vegas price range buffets in 1980, bringing the cuisine of his local France to some culinary arts desert. Rochat has since included Andre's at the Monte Carlo and Alizé at the Palms. But his provincially decorated flagship in a 1930s-era downtown house-with four comfortable eating areas, each representing a different French city and embellished with a lot of wood, tapestries, and gentle lighting-is still really going strong, owing in part to a food list that features both traditional French meals such as coquilles Saint Jacques (scallops in a wine-enriched cream sauce) and lots of with current twists, like grilled quail with figs and prosciutto. Entrée prices begin in the mid-30s.
